Pumpkin Pie Protein Bites

These pumpkin bites have a warm, cozy fall flavor, with cinnamon and nutmeg complementing the natural sweetness of pumpkin and maple syrup. The almond flour and powdered peanut butter add a nutty flavor while providing healthy fats and some protein, and the pumpkin contributes fiber and vitamin A. With an optional chocolate coating for extra richness, these bites make a delicious, easy snack or sweet treat!

 Makes 12–14 bites

Ingredients

  • 2 tbsp powdered peanut butter

  • 2 tbsp maple syrup

  • 1 cup almond flour

  • 1 packet sugar-free vanilla pudding mix

  • ¼ cup pumpkin puree

  • 1 tsp cinnamon

  • ½ tsp nutmeg

  • 1–2 tbsp water (only if needed)

Optional for chocolate coating:

  • ¼ cup chocolate chips

  • 1 tsp coconut oil

Instructions

  1. In a medium bowl, mix the powdered peanut butter, almond flour, pudding mix, cinnamon, and nutmeg until well combined.

  2. Add the maple syrup and pumpkin puree. Stir until a thick dough forms.

  3. If the mixture feels too dry or crumbly, add water 1 tablespoon at a time until it holds together when pressed.

  4. Roll the dough into 12–14 small balls (about 1 inch each).

  5. Place the bites on a plate or tray and chill in the fridge for 15–20 minutes to firm up.

  6. Optional chocolate coating: Melt the chocolate chips and coconut oil together in the microwave in 20-second bursts, stirring between each, until smooth. Dip each bite halfway (or fully) into the chocolate, then set on parchment paper and chill until the chocolate hardens.
