Ginger Basil Beef & Seasonal Veggies


This dish is a great balance of protein, veggies, and fresh herbs, making it both hearty and nourishing. Ground beef provides protein and important nutrients like iron and B vitamins, while green beans and zucchini add fiber, vitamins, and antioxidants. Basil, garlic, ginger, and shallot bring even more plant-based goodness and flavor. It’s a satisfying meal that can support energy, digestion, and overall wellness.

Ingredients

  • 1 lb ground beef 

  • Handful green beans

  • 3-4 medium sized zypher summer squash or zucchini

  • 2 cups basil

  • 1 shallot

  • 3 garlic cloves

  • ¼ cup soy sauce

  • 2 tbsp minced ginger 

  • 1 tbsp rice vinegar 

  • 1 tbsp fish sauce

  • 1 tsp maple syrup

  • 1 tsp (or as desired) hot sauce

Instructions

Prep

  • Peel and roughly chop 3 garlic cloves.

  • Dice the shallot.

  • Chop the green beans and zucchini (or summer squash).

Cook

  1. Heat a little butter in a large skillet over medium-low heat. Add the garlic and shallot; sauté until fragrant (about 1–2 minutes).

  2. Add the green beans and zucchini. Sauté until slightly softened.

  3. Push the vegetables to the side of the pan. Add a little more butter and the ground beef. Increase heat to medium-high.

  4. Break up the beef and let it sit undisturbed until the bottom is nicely browned and crispy. Continue cooking, stirring occasionally, until cooked through, then mix with the vegetables.

  5. Meanwhile, whisk all ingredients for the sauce.

  6. Lower the heat to low. Pour the sauce over the beef and vegetables and stir until everything is fully coated.

  7. Add the basil and stir until it wilts.

  8. Serve immediately, topped with cilantro, green onions, a fried or soft-boiled egg, or any other toppings you like.
