Gluten Free Key Lime Cookies

Using maple syrup and monk fruit sweetener keeps the cookies naturally sweet without relying on traditional refined sugar. Ingredients

2 cups almond flour
¼ cup fresh lime juice
3 tbsp maple syrup
2 tbsp melted coconut oil
2 tsp like zest
½ tsp vanilla extract
Icing
½ cup powdered monk fruit sweetener
2 tbsp lime juice
¼ tsp vanilla extract
Instructions:
Mix the almond flour, lime juice, lime zest, maple syrup, coconut oil, and vanilla extract with a rubber spatula until a packed dough ball forms.
Divide into 12 equal pieces. Roll into balls, then gently flatten each into a disc that still holds its shape.
Refrigerate for 20–30 minutes.
Meanwhile, whisk the powdered sweetener, lime juice, and vanilla extract until smooth for the icing. Set aside.
Bake at 350°F for 12–14 minutes in the oven, or 7 minutes in the air fryer.
Cool completely, then spoon the icing over the cookies and garnish with extra lime zest.
