Gluten Free Key Lime Cookies


These lime cookies are a lighter, wholesome treat made with simple ingredients. Almond flour provides healthy fats, protein, and fiber, while lime juice and zest add vitamin C and antioxidants. Using maple syrup and monk fruit sweetener keeps the cookies naturally sweet without relying on traditional refined sugar. They’re a bright, flavorful dessert that can satisfy your sweet tooth while still fitting into a balanced lifestyle.

Ingredients

Cookies

  • 2 cups almond flour

  • ¼ cup fresh lime juice

  • 3 tbsp maple syrup

  • 2 tbsp melted coconut oil

  • 2 tsp like zest

  • ½ tsp vanilla extract 

Icing

  • ½ cup powdered monk fruit sweetener 

  • 2 tbsp lime juice 

  • ¼ tsp vanilla extract

Instructions:

  1. Mix the almond flour, lime juice, lime zest, maple syrup, coconut oil, and vanilla extract with a rubber spatula until a packed dough ball forms.

  2. Divide into 12 equal pieces. Roll into balls, then gently flatten each into a disc that still holds its shape.

  3. Refrigerate for 20–30 minutes.

  4. Meanwhile, whisk the powdered sweetener, lime juice, and vanilla extract until smooth for the icing. Set aside.

  5. Bake at 350°F for 12–14 minutes in the oven, or 7 minutes in the air fryer.

  6. Cool completely, then spoon the icing over the cookies and garnish with extra lime zest.
